Thai Red Curry

Red Curry paste
You can buy Red Curry paste from any store Or you can make at home  :)
•   2 thai chillies
•   2 dry red chillies
•   ½ inch galangal (Other Type of ginger. You can use ginger if not able to find )
•   4-5 small garlic cloves
•   2 shallots (Other type of onion )
•   2-3 medium kaffir lime leaves
•   2 lemon grass stalks
•   2 tsp coriander seeds
•   1 tsp cumin seeds
•   ¼ tsp black peppercorns
•   1 tsp soya sauce
•   ½ tsp lemon zest
•   2 tbsp coconut milk
Paste: Put all ingredients in grinder and make a semi fine or fine paste.
How to make curry: (*stir*)
•   3 cups of chopped lightly boiled mix vegetables ( any veggies ) 
•   1 cup thick coconut milk
•   2 tbsp  coconut oil
•   2 cups vegetable stock
•   1 tbsp chopped thai basil leaves
Boil vegetables and strain the vegetable stock from the vegetables. In a Different pan, heat the coconut oil. Add the shallots and sauté, now add Thai red curry paste. Cook For some time (2 min) . Add ½ cup coconut milk to this paste. Mix together .After 2 min add vegetable stock and mix .When Curry is boiling add the boiled vegetables. Add the rest of the coconut milk. Add Salt to taste and cook at low heat for 10 min more. Now add thai basil leaves and just simmer for a minute.

Enjoy with Rice (class)
